
Ingredients
- [ ] 250g copha (vegetable shortening), chopped
- [ ] 4 cups rice bubbles
- [ ] 1 cup icing sugar
- [ ] 1 cup desiccated coconut
- [ ] 3 tbsp cocoa powder
Method
- Slowly melt the copha in a saucepan over low heat. Remove from heat and allow to cool slightly.
- Stir in rice bubbles, icing sugar, coconut and cocoa powder until well combined.
- Spoon mixture into patty cases and refrigerate until firm. (10 minutes)
Notes
Can also be spooned onto baking paper for smaller crackles.
